Can I keep my chocolates in the fridge?

It's preferable not to store chocolate in the fridge, which raises the humidity hugely, due to condensation (which may give the chocolates a dull appearance) and other aromas (fruits, vegetables, meats) that may infiltrate the chocolates, giving them an unpleasant taste.

The best way to store chocolate is in a metal box, like a biscuit tin, away from light and moisture, preferably somewhere cool (16-18°C).
But…

If you want to put your chocolates in the fridge anyway, because of hot weather or to protect them (if they are filled with a mixture that includes fresh cream for instance), they should be placed in a sealed plastic box or wrapped in aluminium foil.
