What is the difference between a caraque and a praline?
Caraque is a full (solid) chocolate on the basis of fondant (dark), milk or white chocolate. It may be called mignonette, napolitain or palet depending on the manufacturer.
Filled or unfilled

A praline is a filled chocolate. The inside, the filling, is based on a recipe using such ingredients as butter, fresh cream, chocolate, dried fruits, marzipan, caramel or alcohol . In English of course the word praline also refers to the nut-based filling itself, but in keeping with continental usage Chocolaterie Duval uses it to denote any chocolates with filling.
